Our ackee and saltfish spring roll story

This video was made as part of the Whitby Artistic Food Expo, which highlighted food businesses hit by COVID-19 in the Ajax, Whitby, Oshawa area on the last weekend in January, 2021.

Ackee and saltfish spring rolls are a dish I conceptualized while working back in the day, as the head chef at a local restaurant.


I was talking to someone about textures and ackee and saltfish (a soft and flavourful Jamaican staple breakfast dish usually served with fried dumplings). They mentioned they once tried some in a crunchy shell and it was delicious.


I got to thinking about some of the most crispy exteriors I'd ever had and realized spring roll wrappers would be a great option to try!


We tested this new fusion dish at the restaurant and you can see the same technique we used in this video! These ackee and saltfish spring rolls were a huge hit and went on the menu instantly!


Seeing these crunchy snacks take off at our restaurant was one thing, but seeing it pop into all of our competitors menus and even having other restaurant owners try to poach ME simply because of this one dish was eye opening!


It helped me know that I was on the right track when it came to creating new dishes and I love knowing that I've helped influence the culinary scene in the GTA!
